Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup butter, melted
  • 2 egg yolks
  • 1/3 cup cold water
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup apricot jam

Directions

  1. In a large bowl, mix together the flour and salt.
  2. Add the melted butter and mix until the mixture resembles a crumbly texture.
  3. Add the egg yolks and cold water and mix until a dough forms.
  4. Cover the bowl and refrigerate the dough for 30 minutes.
  5. Preheat the oven to 350 degrees F (175 degrees C).
  6. On a lightly floured surface, roll out the dough until it is 1/8-inch thick.
  7. Cut out 3-inch circles and place them on a greased baking sheet.
  8. In a small bowl, mix together the sugar and vanilla extract.
  9. Spoon the mixture into the center of each circle.
  10. Fold the sides of the circles up towards the middle and pinch the edges to seal.
  11. Bake for 12 to 15 minutes, or until golden brown.
  12. Cool and spread the apricot jam on top.
