Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup butter, melted
- 2 egg yolks
- 1/3 cup cold water
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup apricot jam
Directions
- In a large bowl, mix together the flour and salt.
- Add the melted butter and mix until the mixture resembles a crumbly texture.
- Add the egg yolks and cold water and mix until a dough forms.
- Cover the bowl and refrigerate the dough for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- On a lightly floured surface, roll out the dough until it is 1/8-inch thick.
- Cut out 3-inch circles and place them on a greased baking sheet.
- In a small bowl, mix together the sugar and vanilla extract.
- Spoon the mixture into the center of each circle.
- Fold the sides of the circles up towards the middle and pinch the edges to seal.
- Bake for 12 to 15 minutes, or until golden brown.
- Cool and spread the apricot jam on top.
