Ingredients

  • 2 unbaked 9-inch pie crusts (homemade or store bought)
  • 4 cups fresh or frozen huckleberries
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 egg, lightly beaten
  • 1 tablespoon heavy cream

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine huckleberries, 1/2 cup sugar, cornstarch, cinnamon, nutmeg, and salt. Stir to combine.
  3. Place one of the pie crusts in 9-inch pie pan. Pour the huckleberry mixture into the pan.
  4. Dot with butter.
  5. Brush edge of crust with egg. Place the second crust over the filling. Crimp edges to seal. Brush top crust with egg and cream and sprinkle with remaining 2 tablespoons of sugar.
  6. Cut several vents in the top crust to allow steam to escape.
  7. Bake in preheated oven for 45 minutes, or until crust is golden brown and filling is bubbly.
  8. Let cool before serving.
