Heat the olive oil in a large skillet over medium-high heat. Add the chuck roast and brown on both sides.
In a slow cooker, add the browned chuck roast, garlic powder, Italian seasoning, diced tomatoes, tomato paste, beef broth, salt and pepper. Stir to combine.
Cover and cook on low for 8-10 hours or on high for 4-5 hours.
Remove the roast from the slow cooker and let rest for 10 minutes before slicing.
Serve with mashed potatoes, noodles, or polenta.
