Cyndee's Best Slow Cooker Italian Pot Roast

Ingredients

  • 3-4 pound chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 cup beef broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chuck roast and brown on both sides.
  2. In a slow cooker, add the browned chuck roast, garlic powder, Italian seasoning, diced tomatoes, tomato paste, beef broth, salt and pepper. Stir to combine.
  3. Cover and cook on low for 8-10 hours or on high for 4-5 hours.
  4. Remove the roast from the slow cooker and let rest for 10 minutes before slicing.
  5. Serve with mashed potatoes, noodles, or polenta.
