Ingredients
- 1 cup pumpkin puree
- 2 cups quick-cooking oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine the pumpkin puree, oats, flour, baking powder, baking soda, cinnamon, nutmeg and salt. In a separate bowl, mix together the oil, brown sugar and eggs.
- Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the walnuts, if desired.
- Pour the batter into the prepared loaf pan and bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
