Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, combine the pumpkin puree, oats, flour, baking powder, baking soda, cinnamon, nutmeg and salt. In a separate bowl, mix together the oil, brown sugar and eggs.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the walnuts, if desired.
Pour the batter into the prepared loaf pan and bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
