- 2 Red Bell Peppers, Chopped
- 1 Teaspoon Paprika
- 1 Teaspoon Oregano
- 1 Teaspoon Cumin
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 4 Chicken Breasts, Chopped
- 1 Cup Chicken Broth
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook for 2 minutes, stirring occasionally.
- Add the bell peppers, paprika, oregano, cumin, salt, and pepper. Cook for 2 minutes, stirring occasionally.
- Add the chicken and cook for 5 minutes, stirring occasionally.
- Add the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes or until the chicken is cooked through.
