Ingredients
- 2 lbs. pork tenderloin cut into medallions
- 1 cup Italian-seasoned breadcrumbs
- 1/4 cup freshly chopped parsley
- 2 tablespoons freshly chopped rosemary
- 2 tablespoons freshly chopped thyme
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup extra-virgin olive oil
Directions
- Preheat oven to 350°F.
- In a shallow bowl, combine breadcrumbs, parsley, rosemary, thyme, garlic, salt, and pepper.
- In a separate shallow bowl, pour in the olive oil.
- Dip each pork medallion into the olive oil, then into the breadcrumb mixture, making sure to coat it evenly.
- Place the medallions on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the internal temperature of the pork reaches 145°F.
