Ingredients

  • 2 lbs. pork tenderloin cut into medallions
  • 1 cup Italian-seasoned breadcrumbs
  • 1/4 cup freshly chopped parsley
  • 2 tablespoons freshly chopped rosemary
  • 2 tablespoons freshly chopped thyme
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup extra-virgin olive oil

Directions

  1. Preheat oven to 350°F.
  2. In a shallow bowl, combine breadcrumbs, parsley, rosemary, thyme, garlic, salt, and pepper.
  3. In a separate shallow bowl, pour in the olive oil.
  4. Dip each pork medallion into the olive oil, then into the breadcrumb mixture, making sure to coat it evenly.
  5. Place the medallions on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, or until the internal temperature of the pork reaches 145°F.
  7. Serve with your favorite sides and enjoy!
