Ingredients

  • 2 cups dried green lentils
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground coriander
  • 2 tablespoons honey
  • 1/4 cup chopped fresh parsley

Directions

  1. Soak the lentils in cold water for about 15 minutes, then drain and set aside.
  2. Bring the vegetable broth to a boil in a medium saucepan. Add the olive oil, onion, garlic, cumin, ginger, and coriander to the broth and simmer for about 5 minutes.
  3. Add the drained lentils to the broth and simmer for 10 minutes, or until the lentils are tender.
  4. Stir in the honey and parsley and cook for 1-2 minutes more.
  5. Serve the honey-baked lentils hot.
