Ingredients
- 2 cups dried green lentils
- 4 cups vegetable broth
- 1 tablespoon olive oil

Directions
- Soak the lentils in cold water for about 15 minutes, then drain and set aside.
- Bring the vegetable broth to a boil in a medium saucepan. Add the olive oil, onion, garlic, cumin, ginger, and coriander to the broth and simmer for about 5 minutes.
- Add the drained lentils to the broth and simmer for 10 minutes, or until the lentils are tender.
- Stir in the honey and parsley and cook for 1-2 minutes more.
- Serve the honey-baked lentils hot.
