Ingredients

  • 2 cans of full-fat coconut milk
  • 2 tablespoons of agar agar powder
  • 2 tablespoons of maple syrup

  • 1 teaspoon of vanilla extract

Directions

  1. In a medium-sized saucepan, heat the coconut milk over low heat until warmed but not boiling.
  2. Sprinkle the agar agar powder into the coconut milk while continuously whisking to dissolve.
  3. Bring the mixture to a gentle simmer, stirring occasionally, and cook for 5 minutes.
  4. Remove the saucepan from the heat and let the mixture cool for 10 minutes.
  5. Stir in the maple syrup, probiotic powder or capsule, and vanilla extract. Mix well to combine.
  6. Transfer the mixture to a clean glass jar or individual serving jars.
  7. Cover the jar(s) with a clean kitchen towel or cheesecloth and secure with a rubber band or string.
  8. Place the jar(s) in a warm spot, away from direct sunlight, for 24 to 48 hours to allow the yogurt to ferment and thicken.
  9. Check the yogurt after 24 hours. It should have a tangy flavor and a creamy consistency similar to regular yogurt.
  10. Once the yogurt has reached your desired taste and texture, refrigerate it for a few hours to further thicken and chill.
