Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup flaxseeds
  • 1/4 cup chia seeds
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup dried fruits (raisins, cranberries, or chopped apricots)

Directions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, chopped nuts, shredded coconut, pumpkin seeds, sunflower seeds, flaxseeds, and chia seeds.
  3. In a small saucepan, heat the honey, coconut oil, vanilla extract, ground cinnamon, and salt over low heat. Stir until the mixture is well combined and the coconut oil has melted.
  4. Pour the honey mixture over the dry ingredients and mix until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet and press it down lightly with the back of a spoon to create an even layer.
  6. Bake in the preheated oven for 25-30 minutes, or until the granola turns golden brown, stirring once halfway through to ensure even baking.
  7. Remove from the oven and let the granola cool completely on the baking sheet. It will get crunchier as it cools.
  8. Once the granola is completely cool, break it into pieces and stir in the dried fruits.
  9. Transfer the granola to an airtight container and store it at room temperature for up to 2 weeks.
