Enjoy the creamy and rich taste of homemade stracciatella ice cream. This classic Italian dessert features a smooth vanilla base infused with fine chocolate shavings throughout. With simple ingredients and easy steps, you can create your own refreshing and indulgent treat at home. Perfect for hot summer days or any occasion, this stracciatella ice cream will satisfy your cravings.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean, split and seeds scraped
  • 4 large egg yolks
  • 4 ounces dark chocolate, finely chopped

Directions

  1. In a saucepan, combine the heavy cream, milk, sugar, and vanilla bean seeds. Heat the mixture over medium heat until it begins to simmer, stirring occasionally.
  2. In a separate bowl, whisk the egg yolks until smooth.
  3. Slowly pour about a cup of the hot cream mixture into the egg yolks, whisking constantly to temper the yolks.
  4. Pour the tempered egg yolks back into the saucepan with the remaining cream mixture, whisking constantly.
  5. Continue cooking the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon. This should take about 5-7 minutes.
  6. Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a clean bowl or container.
  7. Cover the bowl/container with plastic wrap, making sure to press it directly against the surface of the custard to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
  8. Once the custard is chilled, freeze it in an ice cream maker according to the manufacturer's instructions. This usually takes about 20-25 minutes.
  9. While the ice cream is churning, melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth and completely melted.
  10. During the last 5 minutes of churning, slowly drizzle the melted chocolate into the ice cream mixture, allowing it to form shavings as it combines.
  11. Transfer the churned ice cream into a lidded container, layering it with additional chocolate shavings if desired.
  12. Cover the container and freeze the ice cream for at least 4 hours or until firm.
  13. Scoop and serve the homemade stracciatella ice cream in bowls or cones.
  14. Enjoy!
