Ingredients

  • 4 large sweet potatoes
  • 1/4 cup melted butter
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans (optional)

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and prick them all over with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender and can be easily pierced with a fork.
  4. While the sweet potatoes are baking, prepare the glaze by mixing together the melted butter, brown sugar, maple syrup, cinnamon, nutmeg, and salt in a small bowl.
  5. After the sweet potatoes are cooked, remove them from the oven and carefully slice them lengthwise, stopping about 1/2 inch from the bottom, creating a pocket.
  6. Place the sweet potatoes back on the baking sheet, open side up, and spoon the glaze over each potato, making sure it gets into the cuts.
  7. Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the glaze is bubbly and caramelized.
  8. If desired, sprinkle the chopped pecans over the sweet potatoes during the last 5 minutes of baking.
  9. Remove from the oven and let the sweet potatoes cool for a few minutes before serving.
