Ingredients

  • 1 cup warm water (110 degrees F/45 degrees C)
  • 2 tablespoons honey
  • 1 (.25 ounce) package active dry yeast
  • 1 1/2 cups whole wheat flour
  • 1 cup seven-grain cereal
  • 1 cup boiling water
  • 1/4 cup honey
  • 3 tablespoons vegetable oil
  • 2 teaspoons salt
  • 3 cups bread flour

Directions

  1. Combine warm water, 2 tablespoons honey, and yeast in a large bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  2. Mix whole wheat flour, seven-grain cereal, boiling water, 1/4 cup honey, vegetable oil, and salt in a separate bowl. Let cool to lukewarm, about 10 minutes.
  3. Stir whole wheat flour mixture into yeast mixture. Add bread flour, 1 cup at a time, until dough is slightly sticky but still firm.
  4. Knead dough on a floured surface until smooth and elastic, about 10 minutes. Place in a greased bowl, turning to coat. Cover with a damp cloth and let rise until doubled in size, about 1 hour.
  5. Punch down dough and shape into a loaf. Place in a greased 9x5-inch loaf pan. Cover and let rise until doubled, about 30 minutes.
  6. Preheat oven to 375 degrees F (190 degrees C).
  7. Bake bread in preheated oven until golden brown and sounds hollow when tapped, about 30 minutes.
  8. Remove bread from pan and cool on a wire rack before slicing.
