Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter, softened
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup shredded sweetened coconut
- 1/2 cup caramel bits
- 1/2 cup semi-sweet chocolate chips
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, combine flour, baking powder and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually blend in the dry ingredients.
- Stir in the coconut, caramel bits and chocolate chips. Drop by rounded teaspoonfuls onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
