- In a large mixing bowl, sprinkle gelatin over 1/2 cup of cold water and let it sit for 10 minutes to bloom.
- In a medium saucepan, combine granulated sugar, corn syrup, salt, and 1/2 cup of water. Heat the mixture over medium heat, stirring constantly, until the sugar dissolves.
- Increase the heat to high and bring the mixture to a boil. Insert a candy thermometer into the mixture and continue boiling until it reaches 240°F (115°C).
- Remove the saucepan from heat and carefully pour the hot sugar mixture into the gelatin mixture. Use an electric mixer on low speed to combine the ingredients.
- Gradually increase the mixer speed to high and beat for 10-12 minutes, until the mixture becomes thick and fluffy.
- Add vanilla and peppermint extracts and beat for an additional 2 minutes.
