Ingredients

  • 3 tablespoons unflavored gelatin
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup powdered sugar, for dusting
  • 1/4 cup cornstarch, for dusting

Directions

  1. In a large mixing bowl, sprinkle gelatin over 1/2 cup of cold water and let it sit for 10 minutes to bloom.
  2. In a medium saucepan, combine granulated sugar, corn syrup, salt, and 1/2 cup of water. Heat the mixture over medium heat, stirring constantly, until the sugar dissolves.
  3. Increase the heat to high and bring the mixture to a boil. Insert a candy thermometer into the mixture and continue boiling until it reaches 240°F (115°C).
  4. Remove the saucepan from heat and carefully pour the hot sugar mixture into the gelatin mixture. Use an electric mixer on low speed to combine the ingredients.
  5. Gradually increase the mixer speed to high and beat for 10-12 minutes, until the mixture becomes thick and fluffy.
  6. Add vanilla and peppermint extracts and beat for an additional 2 minutes.
  7. Prepare a 9x13-inch baking dish by greasing it with non-stick cooking spray. Dust the greased pan with a mixture of powdered sugar and cornstarch.
  8. Pour the marshmallow mixture into the prepared pan and smooth the top with a spatula.
  9. Let the marshmallows sit at room temperature for at least 4 hours, or overnight, until firm.
  10. Once the marshmallows are firm, generously dust a clean surface with the powdered sugar and cornstarch mixture.
  11. Remove the marshmallow block from the pan and place it on the dusted surface. Cut it into desired shapes using a sharp knife or cookie cutters.
  12. Dust each marshmallow with additional powdered sugar and cornstarch mixture to prevent sticking.
  13. Serve the peppermint marshmallows immediately or store them in an airtight container for up to two weeks.
