Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/2 cup pumpkin seeds
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup mixed dried fruits (raisins, apricots, cranberries)

Directions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped nuts, pumpkin seeds, shredded coconut, honey or maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt. Mix well to ensure everything is evenly coated.
  3. Spread the mixture onto the prepared baking sheet and press it down gently with a spatula or your hands.
  4. Bake for 20-25 minutes, stirring once halfway through, until the granola turns golden brown and crispy.
  5. Remove from the oven and let it cool completely on the baking sheet. As it cools, it will become crispier.
  6. Once cooled, break the granola into clusters and stir in the mixed dried fruits.
  7. Transfer the granola into an airtight container and store it at room temperature for up to two weeks.
  8. Serve with yogurt, milk, or enjoy it as a crunchy snack by itself.
