Ingredients

  • 6 pounds of ripe organic tomatoes
  • 1 large organic onion, diced
  • 4 cloves of organic garlic, minced
  • 1/2 cup organic apple cider vinegar
  • 1/4 cup organic brown sugar
  • 1 tablespoon sea salt
  • 1/2 teaspoon organic ground cloves
  • 1/2 teaspoon organic ground cinnamon
  • 1/4 teaspoon organic ground allspice
  • 1/4 teaspoon organic ground black pepper

Directions

  1. Start by washing the tomatoes thoroughly and remove any stems or blemishes. Cut them into quarters.
  2. In a large pot, add the diced onion, minced garlic, and the quartered tomatoes. Cook over medium heat until the tomatoes become soft, stirring occasionally.
  3. Once the tomatoes are soft, use an immersion blender or a regular blender to puree the mixture until smooth. Be cautious when using a regular blender as the hot mixture can splatter.
  4. Return the pureed mixture to the pot and add the apple cider vinegar, brown sugar, sea salt, ground cloves, ground cinnamon, ground allspice, and ground black pepper. Mix well to combine.
  5. Increase the heat to medium-high and bring the mixture to a boil. Reduce the heat to low and let it simmer uncovered for about 2 hours, or until the catsup has thickened to your desired consistency. Stir occasionally to prevent sticking.
  6. Once the catsup has thickened, remove the pot from heat and let it cool completely. Once cooled, transfer the catsup to sterilized glass jars or bottles, and refrigerate until ready to use.
