Ingredients

  • 1 pound dried pinto beans
  • 6 cups water
  • 1 pound bacon, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1/2 pound ground beef
  • 1/2 pound pork sausage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar

Directions

  1. Rinse the pinto beans under cold water, then place them in a large bowl and cover with water. Allow the beans to soak for at least 6 hours or overnight.
  2. Drain the soaked beans and rinse again. In a large pot, combine the beans and 6 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 1 to 1 1/2 hours, or until the beans are tender.
  3. While the beans are cooking, heat a skillet over medium heat and cook the diced bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the pan.
  4. In the same skillet, sauté the diced onion and minced garlic in the bacon drippings until the onions are translucent and the garlic is fragrant.
  5. Add the ground beef and pork sausage to the skillet and cook until browned and fully cooked. Drain any excess grease.
  6. Once the beans are tender, add the cooked bacon, onion mixture, ground beef, and pork sausage to the pot. Stir in salt, black pepper, paprika, chili powder, cumin, ketchup, brown sugar, molasses, mustard, Worcestershire sauce, and apple cider vinegar.
  7. Simmer the beans for an additional 30 minutes, stirring occasionally, to allow the flavors to meld together. Taste and adjust seasonings as needed.
  8. Serve the Best Darn Beans Ever hot as a main course or as a side dish to complement your favorite BBQ dishes.
  9. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
