Ingredients
- 1/2 cup butter
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 2 cups chopped semi-sweet chocolate
- 1/4 cup butter
Directions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Sift together the flour, salt, cocoa powder, and baking powder. Gradually stir the dry ingredients into the creamed mixture until well blended.
- Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut into shapes with cookie cutters. Place cookies on the prepared baking sheet.
- Bake for 8 minutes in the preheated oven, or until set. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Melt the chocolate and butter together in a double boiler. Dip the cooled cookies in the melted chocolate and place on waxed paper to cool and set.
