Ingredients

  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 2 cups chopped semi-sweet chocolate
  • 1/4 cup butter

Directions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla.
  3. Sift together the flour, salt, cocoa powder, and baking powder. Gradually stir the dry ingredients into the creamed mixture until well blended.
  4. Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  6. On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut into shapes with cookie cutters. Place cookies on the prepared baking sheet.
  7. Bake for 8 minutes in the preheated oven, or until set. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. Melt the chocolate and butter together in a double boiler. Dip the cooled cookies in the melted chocolate and place on waxed paper to cool and set.
