  7. Using a slotted spoon, transfer the fries to a paper towel-lined plate again to drain excess oil. Sprinkle with salt while they are still hot.
  8. Serve the chip truck-style fries immediately with your choice of toppings, such as ketchup, mayonnaise, or gravy.
