Ingredients

  • 3 cups rolled oats
  • 1 cup dried apples, chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup raisins (optional)

Directions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, dried apples, walnuts, maple syrup, coconut oil, cinnamon, nutmeg, salt, and vanilla extract. Stir well until all the ingredients are evenly coated.
  3. Spread the mixture evenly onto the prepared baking sheet and press it down gently with the back of a spoon or spatula.
  4. Bake for 25-30 minutes, or until the granola turns golden brown and crispy. Stir the granola halfway through baking to ensure even browning.
  5. Remove from the oven and let it cool completely on the baking sheet. The granola will continue to crisp up as it cools.
  6. Once cooled, stir in the optional raisins if desired.
  7. Transfer the granola to an airtight container and store at room temperature for up to two weeks.
  8. Serve as a breakfast cereal with milk or yogurt, or enjoy it as a snack on its own.
