Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 medium potatoes, peeled and diced
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large pot over medium-high heat.
  2. Add the ground beef and cook, breaking it up with a spoon, until it is no longer pink, about 5 minutes.
  3. Add the onion and garlic and cook, stirring, for 2 minutes.
  4. Add the tomatoes, beef broth, water, Worcestershire sauce, oregano, and basil. Bring to a boil, then reduce the heat to low and simmer, covered, for 15 minutes.
  5. Add the potatoes, corn, and peas and cook, covered, for 10 minutes, or until the potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot.
