Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 2 cups beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 medium potatoes, peeled and diced
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- Salt and pepper to taste
Directions
- Heat the oil in a large pot over medium-high heat.
- Add the ground beef and cook, breaking it up with a spoon, until it is no longer pink, about 5 minutes.
- Add the onion and garlic and cook, stirring, for 2 minutes.
- Add the tomatoes, beef broth, water, Worcestershire sauce, oregano, and basil. Bring to a boil, then reduce the heat to low and simmer, covered, for 15 minutes.
- Add the potatoes, corn, and peas and cook, covered, for 10 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot.
