Ingredients

  • For the cake:
  • - 2 cups all-purpose flour
  • - 2 cups granulated sugar
  • - 3/4 cup unsweetened cocoa powder
  • - 2 teaspoons baking powder
  • - 1 1/2 teaspoons baking soda
  • - 1/2 teaspoon salt
  • - 1 cup whole milk
  • - 1/2 cup vegetable oil
  • - 2 large eggs
  • - 2 teaspoons vanilla extract
  • - 1 cup boiling water
  • For the filling:
  • - 1/2 cup unsalted butter, softened
  • - 2 cups powdered sugar
  • - 2 teaspoons vanilla extract
  • - 2 tablespoons milk
  • - 1/4 cup unsweetened cocoa powder
  • For the chocolate ganache:
  • - 1 cup heavy cream
  • - 8 ounces semi-sweet chocolate, chopped
  • - 1/2 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in the boiling water until the batter is smooth. The batter will be thin, but that's okay.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the filling. In a mixing bowl, beat the softened butter until creamy.
  8. Gradually add the powdered sugar, vanilla extract, milk, and cocoa powder. Beat until smooth and fluffy.
  9. Once the cake is done, remove it from the oven and let it cool completely in the pan.
  10. Once the cake has cooled, spread the filling evenly over the top.
  11. In a small saucepan, heat the heavy cream over medium heat until it begins to steam. Remove from heat.
  12. Add the chopped chocolate and let it sit for 1-2 minutes. Stir until smooth and creamy.
  13. Stir in the vanilla extract and let the ganache cool for 10-15 minutes.
  14. Pour the chocolate ganache over the cake, spreading it evenly. Allow it to cool and set before serving.
