Ingredients
- 1 cup long-grain white rice
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 can (15 ounce) black beans, rinsed and drained
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1/4 cup freshly squeezed lime juice
- Salt and freshly ground black pepper, to taste
Directions
- Cook the rice according to package directions.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chili powder and cumin and cook for 1 minute.
- Add the black beans and cook for 5 minutes. Add the cooked rice, cilantro, parsley, lime juice, salt and pepper.
- Stir to combine and cook for 5 minutes. Serve warm or chilled.
