Herbed Rice and Spicy Black Bean Salad

Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 can (15 ounce) black beans, rinsed and drained
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup freshly squeezed lime juice
  • Salt and freshly ground black pepper, to taste

Directions

  1. Cook the rice according to package directions.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chili powder and cumin and cook for 1 minute.
  3. Add the black beans and cook for 5 minutes. Add the cooked rice, cilantro, parsley, lime juice, salt and pepper.
  4. Stir to combine and cook for 5 minutes. Serve warm or chilled.
