Ingredients
- 2 tablespoons of butter
- 1 onion, diced
- 3 cloves of garlic, minced
- 4 cups of chicken broth
- 4 cups of potatoes, diced
- 2 teaspoons of dried thyme
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
Directions
- In a large pot over medium heat, melt the butter.
- Add the onion and garlic and cook, stirring occasionally, until the onion is translucent, about 5 minutes.
- Add the chicken broth, potatoes, and thyme and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes, or until the potatoes are tender.
- Add the cheddar cheese and stir until melted.
- Season with salt and pepper to taste.
- Serve hot.
