Ingredients

  • 2 pounds venison, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 3 medium potatoes, peeled and cut into 1-inch cubes
  • 2 parsnips, peeled and cut into 1-inch pieces
  • 2 celery stalks, diced
  • 4 cups beef or vegetable broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Directions

  1. In a large pot, heat the vegetable oil over medium heat. Add the venison cubes and brown them on all sides. Remove from the pot and set aside.
  2. In the same pot, add the diced onions and minced garlic. Cook until they turn translucent and fragrant.
  3. Add the carrots, potatoes, parsnips, and celery. Stir well to combine.
  4. Return the browned venison to the pot. Pour in the beef or vegetable broth and the red wine.
