Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, seeded and minced (optional)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 1/4 cup tomato sauce
- Juice of 1 lime
- Fresh cilantro, for garnish
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic, diced bell pepper, and minced jalapeno pepper (if using) to the skillet and sauté for another 2 minutes.
- Push the vegetables to the side of the skillet and add the chicken breasts. Cook for 5-6 minutes per side, or until cooked through.
- Remove the chicken from the skillet and shred it using two forks.
- Return the shredded chicken to the skillet and add the chili powder, cumin, paprika, oregano, salt, and black pepper. Mix well to coat the chicken in the spices.
- Pour in the chicken broth and tomato sauce. Stir to combine.
- Squeeze in the juice of 1 lime and simmer the chicken mixture for 5 minutes to allow the flavors to meld together.
