Ingredients

  • 1 pound beef stew meat, cut into small cubes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and cubed
  • 1 celery stalk, sliced
  • 4 cups beef broth
  • 2 cups water
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups fresh spinach leaves
  • 1 tablespoon lemon juice

Directions

  1. In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
  3. Add the carrots, potatoes, and celery to the pot. Stir and cook for a few minutes until slightly softened.
  4. Return the browned beef to the pot. Pour in the beef broth and water. Add the bay leaf, dried thyme, salt, and black pepper. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat to low. Cover and let simmer for about 45 minutes to 1 hour, or until the beef is tender.
  6. Once the beef is tender, add the fresh spinach leaves to the pot. Stir and cook for another 5 minutes until the spinach wilts.
  7. Remove the bay leaf from the soup. Add the lemon juice and stir well.
  8. Serve the Beef Caldo with Spinach hot, garnished with some freshly chopped parsley if desired. Enjoy!
