- 1 pound beef stew meat, cut into small cubes
- 1 onion, diced
- 4 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and cubed
- 1 celery stalk, sliced
- 4 cups beef broth
- 2 cups water
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups fresh spinach leaves
- 1 tablespoon lemon juice
Directions
- In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
- Add the carrots, potatoes, and celery to the pot. Stir and cook for a few minutes until slightly softened.
- Return the browned beef to the pot. Pour in the beef broth and water. Add the bay leaf, dried thyme, salt, and black pepper. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover and let simmer for about 45 minutes to 1 hour, or until the beef is tender.
- Once the beef is tender, add the fresh spinach leaves to the pot. Stir and cook for another 5 minutes until the spinach wilts.
- Remove the bay leaf from the soup. Add the lemon juice and stir well.
