Ingredients
- 1 pound of raw shrimp, deveined and peeled
- 1 cup of freshly squeezed lime juice
- 1 cup of freshly squeezed lemon juice
- 1 cup of diced tomatoes
- 1/2 cup of diced red onion
- 1 jalapeno pepper, seeded and minced
- 1/4 cup of chopped fresh cilantro
- Salt and pepper to taste
- Tortilla chips or lettuce leaves, for serving
Directions
- In a large bowl, combine the lime juice and lemon juice. Add the raw shrimp and let it marinate in the citrus juices for about 15-20 minutes. The acid in the juices will 'cook' the shrimp.
- While the shrimp is marinating, prepare the rest of the ingredients. Dice the tomatoes, red onion, and jalapeno pepper. Chop the fresh cilantro.
- After the shrimp has marinated, remove them from the citrus juices and place them on a cutting board. Chop the shrimp into small pieces.
- In a separate bowl, combine the chopped shrimp, diced tomatoes, red onion, jalapeno pepper, and cilantro. Season with salt and pepper to taste.
- Stir everything together until well combined. Allow the ceviche to sit in the refrigerator for at least 15 minutes to let the flavors meld together.
- Serve the easy shrimp ceviche with tortilla chips for scooping or over a bed of lettuce leaves for a lighter option. Enjoy!
