Ingredients

  • 1.5 lbs beef chuck, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Directions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add beef cubes and brown on all sides. Remove from pot and set aside.
  3. In the same pot, sauté onions and garlic until fragrant.
  4. Add carrots and celery, cook for a few minutes until slightly softened.
  5. Return beef to the pot, along with kidney beans, black beans, diced tomatoes, beef broth, Worcestershire sauce, thyme, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
  7. Adjust seasoning if needed, and serve hot.
