Egg kulambu is a traditional South Indian dish made with hard-boiled eggs cooked in a spicy and tangy gravy. This recipe combines the richness of boiled eggs with a flavorful blend of spices and herbs, creating a hearty and satisfying dish that pairs perfectly with rice or roti.

Ingredients

  • 6 hard-boiled eggs
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup coconut milk
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tbsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Directions

  1. Heat oil in a pan and add mustard seeds and cumin seeds, let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until oil separates from the masala.
  4. Add coconut milk and 1 cup of water. Bring it to a boil.
  5. Gently add the hard-boiled eggs and simmer for 10-15 minutes.
  6. Sprinkle garam masala and garnish with fresh coriander leaves.
  7. Serve hot with rice or roti.
