  • 4 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper, to taste
  • Chopped fresh cilantro, for garnish
  • Shredded cheddar cheese, for garnish
  • Sour cream, for garnish
  • Sliced green onions, for garnish

Directions

  1. In a large Dutch oven or heavy-bottomed pot, heat some oil over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the diced onion, minced garlic, jalapeno peppers, green bell pepper, and red bell pepper. Sauté until the vegetables are softened.
  3. Add the beef back to the pot and stir in the diced tomatoes, kidney beans, pinto beans, tomato paste, beef broth, chili powder, cumin, smoked paprika, dried oregano, sugar, and cayenne pepper.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the chili simmer for at least 2 hours, stirring occasionally.
