Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
  3. Add the carrots and potatoes to the pot and cook for a few minutes until slightly tender.
  4. Return the browned beef stew meat to the pot and pour in the beef broth and red wine. Stir in the tomato paste until well combined.
  5. Add the fresh rosemary, dried thyme, salt, and pepper. Stir to combine.
  6. Bring the stew to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 2 hours, or until the beef is tender and the flavors have melded together.
  7. Taste and adjust the seasonings if needed.
  8. Serve the rosemary beef stew hot, garnished with fresh rosemary sprigs if desired. Enjoy!
