Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup wild rice
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Directions

  1. In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Cook until vegetables are softened, about 5 minutes. Add garlic and thyme, and cook for another minute.
  3. Pour in chicken broth and wild rice. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Shred the cooked chicken and add back to the pot. Stir in heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
