Ingredients

  • 2 pork shanks
  • 1 lb ground pork
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups beef broth
  • 1 cup red wine
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup flour

Directions

  1. Preheat oven to 350°F.
  2. Season pork shanks with salt and pepper.
  3. Heat olive oil in a Dutch oven and brown pork shanks on all sides.
  4. Remove shanks and set aside.
  5. In the same pot, sauté onions, carrots, celery, and garlic until softened.
  6. Stir in flour and cook for 1-2 minutes.
  7. Add red wine to deglaze the pan.
  8. Return pork shanks to the pot and add diced tomatoes, beef broth, thyme, and rosemary.
