Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 butternut squash, peeled and diced
  • 2 cans of diced tomatoes
  • 1 can of kidney beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 2 cups of chicken broth
  • 2 tablespoons of chili powder
  • 1 tablespoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cinnamon
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Directions

  1. In a large pot or Dutch oven, brown the ground turkey over medium heat, breaking it up into smaller pieces as it cooks.
  2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
  3. Add the diced butternut squash, diced tomatoes (including the juice), kidney beans, black beans, chicken broth, chili powder, cumin, paprika, cinnamon, salt, and pepper to the pot.
