Ingredients

  • For the tart crust:
  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ¼ cup melted coconut oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • For the filling:
  • 2 cups mixed berries (such as strawberries, blueberries, raspberries)
  • ¼ cup fresh lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • For the topping:
  • Extra fresh berries
  • Fresh mint leaves (optional)

Directions

  1. Preheat the oven to 350°F (175°C) and grease a tart pan with coconut oil.
  2. In a mixing bowl, combine the almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, and salt. Stir until well combined and a dough forms.
  3. Press the dough evenly into the bottom and sides of the tart pan, creating a crust. Make sure the crust is compact and firm.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown. Remove from the oven and let it cool completely.
  5. While the crust is cooling, prepare the filling. In a saucepan, combine the mixed berries, lemon juice, cornstarch, and water. Stir well to combine.
  6. Cook the berry mixture over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens slightly. This should take about 5-7 minutes.
  7. Remove the saucepan from the heat and let the berry filling cool for a few minutes.
  8. Pour the cooled berry filling into the cooled tart crust, spreading it evenly.
  9. Place the tart in the refrigerator and let it chill for at least 2 hours, or until the filling is set.
  10. Before serving, garnish the tart with extra fresh berries and some fresh mint leaves, if desired. Slice and enjoy!
