  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 cup low-fat buttermilk
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1/2 cup low-fat cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup light whipped topping
  • Fresh raspberries (for garnish)

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the cake flour, whole wheat flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the applesauce, eggs, red food coloring, vanilla extract, and vinegar. Mix until well combined.
  4. Slowly add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.
  8. In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  9. Place one cake layer on a serving plate and spread half of the cream cheese frosting on top. Place the second cake layer on top and spread the remaining frosting on the top and sides of the cake.
  10. Decorate the cake with fresh raspberries and refrigerate for at least 1 hour before serving.
  11. Slice and enjoy this delicious reduced fat and cholesterol red velvet cake!
