Ingredients
- 1 cup cooked quinoa
- 1 cup oats
- 1 ripe banana, mashed
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 cup raisins or chocolate chips (optional)
Directions
- Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine cooked quinoa, oats, mashed banana, almond butter, maple syrup, cinnamon, vanilla extract, and raisins or chocolate chips (if using). Mix well to combine.
- Using a cookie scoop or spoon, drop dough onto the prepared baking sheet and flatten slightly with the back of the spoon.
