Ingredients

  • 12 rice paper wrappers
  • 1/2 pound cooked shrimp, peeled and deveined
  • 2 cups shredded lettuce
  • 1 cup julienned carrots
  • 1 cup julienned cucumber
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped peanuts
  • 1/4 cup rice vinegar
  • 2 tablespoons fish sauce
  • 2 tablespoons sugar
  • 1 clove garlic, minced
  • 1 teaspoon sriracha sauce
  • 1/4 cup peanut butter
  • Water for soaking rice paper wrappers

Directions

  1. Prepare the dipping sauce by whisking together rice vinegar, fish sauce, sugar, garlic, sriracha sauce, and peanut butter. Set aside.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until softened. Place wrapper on a clean surface.
  3. Arrange shrimp, lettuce, carrots, cucumber, mint, and cilantro on the bottom third of the wrapper. Sprinkle with chopped peanuts.
  4. Fold bottom of the wrapper over the filling, then fold in the sides and roll tightly to seal.
  5. Repeat with remaining wrappers and filling ingredients.
  6. Serve fresh spring rolls with the dipping sauce on the side. Enjoy!
