Ingredients
- 12 rice paper wrappers
- 1/2 pound cooked shrimp, peeled and deveined
- 2 cups shredded lettuce
- 1 cup julienned carrots
- 1 cup julienned cucumber
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
- 1/4 cup rice vinegar
- 2 tablespoons fish sauce
- 2 tablespoons sugar
- 1 clove garlic, minced
- 1 teaspoon sriracha sauce
- 1/4 cup peanut butter
- Water for soaking rice paper wrappers
Directions
- Prepare the dipping sauce by whisking together rice vinegar, fish sauce, sugar, garlic, sriracha sauce, and peanut butter. Set aside.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until softened. Place wrapper on a clean surface.
- Arrange shrimp, lettuce, carrots, cucumber, mint, and cilantro on the bottom third of the wrapper. Sprinkle with chopped peanuts.
- Fold bottom of the wrapper over the filling, then fold in the sides and roll tightly to seal.
- Repeat with remaining wrappers and filling ingredients.
