Ingredients

  • 1 cup cooked quinoa
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond butter
  • 1/4 cup dark chocolate chips
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the cooked quinoa, rolled oats, almond flour, honey, melted coconut oil, almond butter, dark chocolate chips, dried cranberries, chopped walnuts, vanilla extract, baking powder, cinnamon, and salt. Mix well to combine.
  3. Scoop a tablespoon of dough and form it into a cookie shape. Place it on the prepared baking sheet. Repeat with the remaining dough, leaving enough space between each cookie.
  4. Using the back of a fork, gently press down on each cookie to flatten it slightly.
  5. Bake in the preheated oven for 15-18 minutes, or until the edges are golden brown.
  6. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.
