Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1 cup pumpkin puree
- 1/4 cup unsweetened applesauce
- 1/4 cup low-fat milk
- 1 egg
- 1 tsp vanilla extract
Directions
- Preheat oven to 375°F and grease a muffin tin.
- In a large bowl, combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, mix together pumpkin puree, applesauce, milk, egg, and vanilla extract.
- Add wet ingredients to dry ingredients and stir until just combined.
- Spoon batter into muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
