Enjoy the classic flavors of gingersnaps in a healthier version with the addition of applesauce. These cookies are soft, chewy, and full of warm spices like ginger, cinnamon, and cloves. Perfect for snacking or holiday gatherings!

Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/4 cup molasses
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1/4 cup sugar for rolling

Directions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the applesauce, sugar, and molasses.
  3. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in the sugar for coating.
  6. Place the coated balls on the prepared baking sheet and flatten slightly with the bottom of a cup.
  7. Bake for 10-12 minutes until the cookies are set but still soft. Let them cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
  8. Enjoy your less fat gingersnaps with a glass of milk or a cup of tea!
