Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raisins or dried fruit (optional)
  • 1/2 cup chopped nuts (optional)

Directions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the wheat bran and milk. Let it sit for a few minutes to soften the bran.
  3. Add the vegetable oil, egg, honey or maple syrup, and vanilla extract to the bran mixture. Mix well.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. If desired, fold in raisins or dried fruit and chopped nuts.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
