Ingredients

  • 2 cups brown rice
  • 4 tablespoons rice vinegar
  • 2 tablespoons sugar

  • 4 sheets nori seaweed
  • 1 avocado, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 red bell pepper, thinly sliced
  • 1/4 yellow bell pepper, thinly sliced
  • Soy sauce, for dipping
  • Pickled ginger, for serving
  • Wasabi, for serving

Directions

  1. Cook the brown rice according to package instructions.
  2. In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved.
  3. Once the rice is cooked, transfer it to a large bowl and drizzle the vinegar mixture over it. Gently fold the rice to evenly distribute the vinegar.
  4. On a bamboo sushi mat, place a sheet of nori seaweed. Wet your hands with water to prevent sticking, then spread about 1/2 cup of the seasoned brown rice evenly on the nori, leaving a 1-inch border at the top.
  5. Arrange avocado, cucumber, and bell pepper slices in a line across the center of the rice.
  6. Using the sushi mat, roll the nori tightly into a cylindrical shape, applying gentle pressure to secure the filling. Wet the border of the nori with water to seal the roll.
  7. Repeat the process to make three more rolls.
  8. Using a sharp knife, slice each roll into bite-sized pieces.
