Wash the potatoes and pat dry. Carefully slice potatoes into thin slices, almost but not all the way through the potato. Make sure to leave about 1/4 inch at the bottom of the potato so the slices stay together.
In a small bowl, mix together the melted butter, garlic, Italian seasoning, garlic powder, paprika, salt, and pepper.
Brush the potatoes with the butter mixture and place on a baking sheet. Bake in preheated oven for 30 minutes.
Increase oven temperature to 425 degrees F. Bake for an additional 18 minutes, or until the potatoes are golden brown and crispy.
Remove from oven and serve immediately.
