In a large pot, heat the olive oil over medium-high heat. Add the onions, carrots, celery, and garlic and cook until the vegetables are soft, about 5 minutes.
Add the ham bone and cook for an additional 2 minutes.
Add the chicken broth and stir to combine. Bring to a boil and reduce the heat to low.
Add the bay leaves, thyme, oregano, and rosemary and simmer for 30 minutes.
Add the potatoes and simmer for an additional 15 minutes, or until the potatoes are tender.
Remove the bay leaves and season with salt and pepper to taste.
