Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 large eggplant, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons freshly chopped cilantro

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the cauliflower florets, eggplant cubes, olive oil, cumin powder, garam masala, ground coriander, turmeric powder, chili powder, salt, and black pepper.
  3. Spread the mixture onto a baking sheet and roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly browned.
  4. Sprinkle with freshly chopped cilantro and serve.
