Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can white beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Directions

  1. In a large pot, heat olive oil over medium heat. Add chicken cubes and cook until golden brown, about 10 minutes.
  2. Add onion, garlic, and bell pepper. Cook until vegetables are softened, about 5 minutes.
  3. Stir in diced tomatoes, white beans, corn, chili powder, cumin, oregano, salt, black pepper, and cayenne pepper (if using).
  4. Bring to a boil, then reduce heat to low and simmer, covered, for 20 minutes.
  5. Uncover and cook for an additional 5 minutes.
  6. Serve hot.
