Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
3 cups vegetable broth
2 cups canned pumpkin puree
½ teaspoon ground cumin
¼ teaspoon ground nutmeg
1 teaspoon fresh thyme leaves
Salt and pepper, to taste
1 cup heavy cream
2 tablespoons chopped fresh parsley, for garnish
Directions
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring, until softened, about 5 minutes.
Add the broth, pumpkin puree, cumin, nutmeg, and thyme. Bring to a boil, reduce heat to low, and simmer for 15 minutes.
Remove from the heat and let cool slightly. Working in batches, puree the soup in a blender or food processor until smooth.
Return the soup to the pot and stir in the heavy cream. Heat until hot, but do not boil.
Taste and add salt and pepper if desired. Serve the soup hot, garnished with chopped parsley.
