Ingredients

  • 2 lbs. boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/2 cup orange marmalade
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/2 cup pineapple chunks
  • 1 red bell pepper, cut into 1-inch cubes
  • 1 green bell pepper, cut into 1-inch cubes
  • 1 red onion, cut into 1-inch cubes
  • Wooden skewers

Directions

  1. In a medium bowl, combine the orange marmalade, soy sauce, sesame oil, honey, garlic, ginger, red pepper flakes, and black pepper. Mix well and set aside.
  2. Thread the chicken cubes, pineapple chunks, bell peppers, and red onion onto the wooden skewers. Place the skewers in a shallow dish.
  3. Pour the marinade over the skewers and make sure they are evenly coated. Cover the dish with plastic wrap and marinate in the refrigerator for at least one hour.
  4. Preheat an outdoor grill to medium-high heat. Grill the skewers for 8-10 minutes, turning once, or until the chicken is cooked through and the vegetables are lightly charred.
  5. Remove from the grill and serve.
